Food grade salt - More than an everyday seasoning
Food grade salt is the cooking salt intended for human consumption. It is a flavour carrier, preservative and ideal medium for additives such as iodine. It is impossible to imagine food production and households without the various salt products.
Coarse-grained pretzel salt or Hagelsalz® is used in bakeries in particular. Nitrite pickling salt
Nitrite pickling salt is indispensable in sausage and meat processing - from artisan businesses to large-scale production - and guarantees both visual and culinary pleasure. Many of our meat products could not be produced without the addition of the homogeneous mixture of high-quality evaporated salt and sodium nitrite.
The term “curing” means the pickling or preservation of meat and sausage products with curing salt. There are four important effects of curing: The optimal reddening of the meat products, aroma and flavour formation, to protect against dangerous bacteria (botulinus), to prevent the fats from oxidising (becoming rancid).
